Particularly sought after for birthday gifts, old vintages of wines are often considered precious goods. Sometimes elevated to the rank of myths, in the perfect sense of the term, it is nevertheless from time to time an unpleasant surprise that awaits the one who uncorks an old bottle of wine …. Several conditions must be met to ensure the best chance of success. – First, it is quite obvious that the quality, the terroir and the level of appellation of the wine will be decisive: a Grand Cru will keep much longer than a regional appellation for example. There will be all the more chances of success if we open a wine of good level, village appellation, 1er Cru or Grand Cru ; for example, I had the chance to taste a Pommard 1945, a very great moment! – Then the conditions of conservation of the wine are essential: stability of the temperature and humidity all year round, no light, no exposure to heat, no shaking or vibrations … – Each wine will reach its optimum… then begin to regress. In good conditions, most quality wines can be kept for 20 or 30 years. After only certain categories of wines can afford to be kept longer… But once again in wine no absolute rule : we can come across less prestigious old wines that will be a treat!
